Classic Tiramisu

Pair with a glass of our Bella Dolce for the perfect finish to a meal.


  •   6 eggs, separated
  •   1 pound mascarpone cheese
  •   36 ladyfingers (savoiardi), split in half lengthwise
  •   2 ½ cups strong coffee
  •   ½ cup dry marsala wine
  •   ¾ cup + 1 tbsp sugar
  •   Cocoa for dusting


  1. Combine egg yolks and sugar in the top of a double boiler, over boiling water. Reduce heat and cook, stirring, for about ten minutes. Remove from heat. Whip together until lemon yellow and fluffy, then mix in cheese. Whip egg whites until stiff and gently fold into cheese mixture.
  2. Dip about a third ladyfinger halves into coffee and line a large glass bowl with them, bottom and sides. A souffle bowl works great.  Mix marsala into the rest of the coffee.
  3. Spoon a third of cheese mixture into the bowl and top with another third of ladyfingers, dipped in the coffee and wine. Repeat this layering, finishing with a layer of cheese mixture.
  4. Dust the top with cocoa and refrigerate several hours or overnight.
  5. To gild the lily, add chocolate curls to top before serving.
  6. Variation: To one third of the cheese mixture add 3 tbsp cocoa. Use for middle layer.
